WHAT’S COOKING???

With Avocados so much in the news today and the possible new development of what they can do for your health, I am giving several great recipes with Avocados.

GUACAMOLE – POMEGRANATE DIP
Recipe comes from Julie at Grand River Physical Therapy
2  Avocados  –  chopped  or  mashed
1  Pomegranate  – use seeds only
1/2  cup Feta Cheese

Mix all above together and enjoy with chips, crackers or any other finger food of your choice.  This is great, eat and enjoy…

SMOKEY TILAPIA TACOS
The fact that Tilapia cooks fast, you should have the other components ready for the tacos prior to broiling the Tilapia.

1  tsp. garlic powder
1  tsp. Spanish smoked paprika
1/4  tsp. ground coriander
1/4  tsp. freshly ground black pepper
3/8  tsp. kosher salt, divided
2  pounds Tilapia fillets
1  Tbl. olive oil
1  Tbl. fresh cilantro, finely chopped
2  tsp. canned, chopped green chilies
1  diced pealed avocado
12  (6 inch) corn tortillas
Cooking spray
6  Lime wedges
Preheat boiler to high.

Combine first four (4) ingredients and 1/4 tsp. salt.  Brush fillets with oil, and sprinkle with spice mixture.  Place fillets on a baking sheet.  Broil six (6) minutes or until fish flakes easy when tested with a fork.

Combine remaining 1/8 tsp. salt, cilantro, chilies, and avocado in a bowl, mash with a fork.
Heat tortillas on a grill pan coated with coking spray 20 seconds on each side or until charred.
Divide avocado mixture and fish among tortillas.  Serve with lime wedges.
This is super good and your kids will enjoy.  Have them help you with the preparation, they will have fun.   Serves six (6)

APPLE  SLAW

I use apples in many recipes, including pork and beef recipes.  Apples give a fantastic flavor and are easy to incorporate.  Remember to peal and core the apples before using.

In a large bowl,  whisk together 1/2 cup Buttermilk, four (4) Tbls. cider vinegar, and two (2) Tbls. extra-virgin olive oil;  season.  Add one (1) bag (12 ozs) Broccoli slaw and one (1) Granny Smith apple cut into matchsticks.  Toss to coat.  Serves 8 
This is great with any meal.
