With the changing of seasons coming soon, I will be doing some fish recipes, starting with a simple salmon recipe that is easy to make.


1/3  cup minced onions
1   (15 to 16 oz.)  can salmon
1   egg
1/2  cup flour
1  1/2  tsp.  baking powder
1  1/2  cup Crisco  (to fry)

Drain salmon;  set aside 2 tablespoons juice.  Mix salmon, onion, and egg until sticky,  then stir in flour.  Add baking powder to reserve juice,  then stir into salmon mixture.  Shape into eight (8) patties and fry for five (5) minutes on each side.

This is very good served with fried potatoes and a salad or fruit and comes from the kitchen of Jan Pasikowski.

3  Tbsp.  unsalted  butter
1 1/4  cup sugar
3  eggs
1  Tbsp.  flour
1  cup buttermilk
1  tsp.  vanilla extract
1  (9-inch)  pie shell,  unbaked

Preheat oven to 300 degrees.  In mixing bowl, cream softened butter and sugar.  Stir in eggs, flour, buttermilk and vanilla;   mix well.  Pour into pie shell. Bake until top of knife comes out clean when inserted in the center,  about 45 minutes-one (1) hour.  Cool slightly before serving.  Serves eight (8)
