Well I thought that Spring was here and as we all know by looking out the window today (Sunday) it is still winter.  If this was April 1st I would say that this was the biggest April Food Day I have ever seen!!!  So now for some good recipes that I hope you will try and enjoy.  These are simple and good……

Set out a 11 3/4 x 7 1/2 x 1 3/4 inch baking dish.

1             cup whipped potatoes
Add and mix thoroughly 
1/4 cup finely chopped onion
1/4 cup chopped sweet pickle
3 Tbsp. chopped pimiento
Set aside.

Make a lengthwise slit almost through
6 frankfurters
open the slit and spread the cut surfaces with
1/4  cup of prepared mustard
Arrange frankfurters in the baking dish with cut surface up and pile potato mixture lightly over top.
Bake at 350 degrees for 20 minutes or until lightly browned.
If you would like to broil them do then following;
Arrange franks on broiler rack.  Pile potato mixture lightly over top of frankfurters.
Set temperature control to broil.

Place broiler rack in broiler with top of potatoes 4 to 5 inches from source of heat.. Broil 7 to 8 minutes or until lightly browned.  Serves 6.   The is great and good especially if you have children that love franks and mashed potatoes…..

Set out a large, shallow baking dish;
Take out
12 slices of bacon and set aside.
Cut lengthwise almost through
12 frankfurters

Mix together
1 cup sweet pickle relish
2 Tbsp. prepared mustard
Fill frankfurters with relish mixture.  Starting at one end, wrap one slice of bacon around each frankfurter;  secure ends with wooden toothpicks.  Place franks in baking dish and bake at 375 degrees for 25 minutes or until bacon is crisp..  Serves 6 and is great….. This is good with any kind of potatoes and a salad…..like cole slaw

Put a large bowl into refrigerator to chill…

Blend together thoroughly
1/2 cup Mayonnaise
1/4 cup thick sour cream
1 Tbsp. lemon juice
and add a mixture of
2 tsp. celery seed
1 tsp. sugar
1/4 tsp. salt
1/8 tsp. Accent
plus a few grains of pepper
place in refrigerator to chill

Wash and finely chop or shred
3/4 lb. cabbage (about 3 cups, shredded)
Place cabbage into bowl and put in refrigerator to chill.
Shortly before serving, remove cabbage from refrigerator and pour enough dressing over to moisten.  Toss lightly to blend.
Wash,  quarter, core and thinly slice
3 apples
Gently toss apple slices with the cabbage and add more dressing if desired…  Serves approximately 6 and I use this all the time and everyone enjoys it………
**Should you want to use pineapple in it, omit celery seed and use drained 1.9 ounce canned pineapple tidbits (about 3/4 cup drained) in place of the apples…
