Now that the beautiful Christmas Season is almost here and Santa has the Deer ready for their all night trip around the world, I will do some very good recipes for all to try….You might want to have the kids leave some of the goodies for that Big Man in Red, and don’t forget the deer…..

CHOCOLATE AND BUTTERSCOTCH FUDGE

1 cup butterscotch chips
2 cups semisweet chocolate
chips
1/2 cup chopped walnuts
1 can (14 oz.) sweetened
condensed milk
1 tsp. vanilla extract

Line an 8-inch square pan with foil. In small microwave-safe bowl, place butterscotch chips and 1/3 cup milk; set aside.
In medium microwave-safe bowl, place chocolate chips, remaining milk and vanilla. Microwave on high 1 minute; stir until chips are melted. Stir in walnuts, spread evenly in prepared pan. Microwave butterscotch chips on high for 45 seconds and stir until chips are melted. Spread evenly over chocolate layer. Refrigerate until firm. Remove from pan and place on cutting board. Peel off foil; cut into squares. Store tightly covered in refrigerator.
This makes about four (4) dozen pieces or two (2) pounds of great fudge. DO NOT DOUBLE THE RECIPE…this a super great fudge…..

FRUIT COCKTAIL CAKE

1 1/2 cups sugar
1 tsp. baking soda
2 cups flour
3 eggs (beaten lightly)
1/2 tsp. salt
1 can fruit cocktail
( including juice)

Mix all ingredients together and pour into a greased 9” x 13” pan. Bake at 350 degrees for 35 to 40 minutes.

Topping:
1/2 cup packed brown sugar
1/2 cup coconut
Toss with fork until mixed. Sprinkle on cake and return to oven for 10 minutes.

1/2 cup butter (1 stick)
1 tsp. vanilla extract
Melt butter, add vanilla and boil for 2 minutes, then pour over cake….YYYummmy. This is really great as most men really like this cake….

CHICKEN ANGELO

8 oz. fresh mushrooms,
sliced
4-5 chicken breast halves,
skinned and boned
2 eggs, beaten
1 cup bread crumbs, dry
2 Tbsp. butter
6 oz. sliced Mozzarella
cheese
3/4 cup chicken broth

Layer half of the mushrooms in bottom of a 9” x 13” baking dish. Dip chicken into beaten egg, then roll in bread crumbs. Melt butter in skillet, brown both sides of chicken then layer on top of mushrooms. Layer rest of mushrooms on top, then top with cheese. Add broth to dish and bake at 350 degrees for 30 to 35 minutes or until chicken is done. Serve over a bed of hot rice or noodles. I love this meal as will all you serve it to……
As I am doing this today, it is snowing with big white flakes and is just beautiful, so I will leave you with this….
